Dish of Horse

My mother made a dish of horse. People in Kumamoto usually eat meat of horse. Eating meat of horse is one of cultures in Kumamoto. Usually, we eat raw meat of horse. If you eat fried them, they have some strange smell. I recommend you eating them as raw. I don't know how to cook them with heat. My neighbor gave us a meat block of horse. That was sinew. Sinew is hard, so it is difficult to eat as raw. My mother simmered them for a long time. Then, she brought a dish to a table. That dish was below picture. The taste was salty-sweet.
